Baking in China

Baking? Not possible! Our kitchen has a couple of gas burners, a microwave, a sink with no plumbed-in hot water, a sterilizer, and very low benches. There is no oven.

So, oven-less, and with a gluten-free eater who has a hankering for muffins, we remember all the steamed bread we see sold on the street corners.

Armed with a bag of imported gluten-free flour, a bamboo steamer, some very ripe bananas and small paper cups, I make my first batch of steamed muffins. They work; they taste okay and because of the brown sugar they look like baked goods too.
